Contrôler si un champ est vide:

if ($tonchamp = "")
{

}

bon ça je pense que tu t'en doutais...

Et pour contrôler si un mail est valide:

http://www.commentcamarche.net/forum/affich 4950125 valide adresse mail php

...etc.
