Après avoir testé, l'instruction qui marche est :
$str = preg_replace('/".*?"/', "", $str)

Exemple :

$str = "\"toto\" titi \"tata\" titi";
echo "<i>$str</i><br>";
$str = preg_replace('/".*?"/', "", $str);
echo "<i>$str</i><br>";
